Carbonation is weird, and I’ve gotten to where I only seek out carbonated beverages when I eat Mexican food or need a vector for my vodka. Though it’s not ground-breaking, I started exploring carbonating fluid gels, based on Russel Karath’s blog post about it. I explored some different flavored waters but ended up moving towards thicker liquids, like purees. I also switched to agar agar from low-acyl gellan.

Here is a shot of my first attempt at a carbonated fluid gel. Ahem. It didn’t have the strength for the application I was exploring, but it was sort of different. It’s reminiscent of a chopped up Jell-o set with soda pop.
