A few months ago, I had the rare and incredibly fun opportunity to get a $40 gift from CSN.com. I purchased an Analon saucier and a food thermometer. I know, they’re not romantic, but they’re so practical. I rave about my saucier all the time. I heat milk and soup for one in the little pan, and it’s fantastic. It’s heavy-weight, like a Dutch oven, so things don’t scorch easily at all. You really have to abuse the temperature to burn your food, and I love that little safety buffer. I admit that there times that I get a bit distracted in the kitchen, after-all.

Peas on Moss is a sort of play on words for the French phrase, Mise en place. For me, Mise en place, which means everything in its place, is truly the best way cook. When I set myself up before I begin cooking it frees my mind to be able to focus on the process of cooking. In cooking timing is everything and having your ingredients ready to go before you begin cooking can be the factor that helps you craft that perfect dish.

Your blog is named "Peas on Moss" as a play on words and alliteration (I love alliteration!) of the French words "mise en place". I myself am an organizational freak, so I always love to know that other people are that way too. You must be a fantastic chef to be able to ignore that in the kitchen. Everything must be measured precisely and placed in order if there's any hope of my recipes turning out edible!

mmmm… it's a play on words for something i wish i was good at. Mise en place. I alway have good intentions to lay it all out beforehand… but then… i think i just get too excited to start cooking and give up on the "laying everything out beforehand" bit. So… Peas on Moss is a little twist to the phrase "Mise en place". But when I make dinner tonight (Thai red curry) you better believe I'll be laying it out beforehand 🙂 -Julie
Kim, I went back and found the blog where you explain that Peas on Moss is a play on words of the French term "Mise en place." I didn't know you were so organized with everything else you do too. Very impressive, I could use your help with getting all of my files and books organized! 🙂
But back to mise en place…it is quite a coincidence that when I cook, I HAVE to have everything laid out, ready to be used or I just feel like there is chaos in my kitchen. And I clean up and put away everything as soon as I'm done using it. I guess I do that to free up counter space (there's never enough counter space when you're trying to create a masterpiece) and also to minimize the clean time after the meal has been prepared. I didn't realize there was a term for preparing the ingredients before cooking, thanks for educating me Chef Kim! 🙂
